French Potato Leek Soup

INGREDIENTS

  • 1⁄2 lb potatoes
  • 1⁄4 lb leeks
  • 1⁄4 lb onions
  • 1 1⁄2 tbs butter
  • 3⁄4 cup milk
  • Salt, pepper, and nutmeg to taste
  • 2 tbs chopped parsley

COOKING DIRECTIONS

  1. Peel and dice the potatoes. Peel and slice the leeks and onions.
  2. Melt the butter in a large pot, adding the onions and leeks. Stir, cover, and allow the vegetables to steam for 10 minutes.
  3. Next, add the diced potatoes and season with salt, pepper, and nutmeg. Whisk the milk together with 1 1⁄2 cups hot water and add to the potato, leek, and onion mixture. Allow ingredients to cook for 15 minutes.
  4. Season to taste and serve topped with chopped parsley. You can also modify the flavor of this soup by using other herbs such as tarragon, coriander, or basil.

QUICK TIP

To prevent the potatoes from darkening after peeling, keep them submerged in a pot of cold water.
